Most review platforms mix every type of restaurant together, and a five-star rating rarely tells you if the dough is properly fermented or if they're using a wood-fired oven.
Over the years, I've traveled across Europe and collected recommendations from friends, fellow pizza enthusiasts, and locals who know their neighborhoods. I started keeping a personal list of places that serve real Neapolitan pizza—the kind that's worth crossing town for.
